01 - In a large mixing bowl, add the Greek yogurt, fresh lemon juice, lemon zest, honey, vanilla extract, and a pinch of sea salt. Whisk vigorously until the mixture is completely smooth and well blended.
02 - Gently fold in any optional ingredients such as finely chopped fresh mint or mini white chocolate chips, distributing them evenly throughout the mixture.
03 - Pour the mixture evenly into popsicle molds, filling each cavity. Tap the molds lightly on the counter to release any trapped air bubbles, then insert popsicle sticks into the center of each mold.
04 - Place the filled molds in the freezer and freeze for at least 4 hours, or until the popsicles are completely firm and set throughout.
05 - To remove the popsicles from the molds, briefly run the outside of each mold under warm water for a few seconds, then gently pull the popsicle out by the stick. Serve immediately.
